Bonefish Grill Warm Mango Salsa

1 cup of red onions, charred and chopped in 1/4″ pieces
1 quart of small diced mango (drained and chopped in 1/4″ pieces)
1/4 cup diced red pepper (eighth-of-an-inch pieces)
1/2 cup of mango puree
1/4 cup of scallions (chopped)
1/4 cup of chopped cilantro

Peel and slice red onion in two to three large pieces. Lay on hot grill and char.

Chop red onion into quarter-inch pieces

Dice the mango and red pepper

Mix all together

When ready to serve, heat in microwave or on stove top for 3 minutes.

Add scallions and cilantro, serve over grilled fish fillet.
