375 g plain flour
1-1/2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
175 g sugar
1/4 teaspoon salt
2 eggs; beaten
250 ml buttermilk
100 g butter
150 g blueberries
Yield: 24 muffins
Sift dry ingredients together in a large bowl. In another bowl, whisk the eggs, buttermilk and butter that has been melted and browned slightly. Make a well in the dry ingredients and pour in the liquid ingredients, mixing quickly. Fold in the blueberries. Spoon the batter into greased muffin cups. Bake at 200 C / 400 F / Gas 6 for 20 -30 minutes until golden brown.
