500 ml beets, cooked & diced 2 cups
2 oranges, peeled & cut into slices
125 ml sweet white onion, thinly sliced 1/2 cup
DRESSING
25 ml balsamic vinegar 2 tbsp
15 ml orange juice 1 tbsp
15 ml olive oil 1 tbsp
– salt & pepper to taste
15 ml fresh parsley, chopped 1 tbsp
In a medium bowl; combine beets, oranges and onions. Set aside.
In a small bowl; whisk together vinegar, orange juice, olive oil, salt and pepper. Add to beet mixture; toss gently. Chill. Sprinkle with parsley just before serving.
