Beef and Potato Bake

1 kg red potatoes, scrubbed & quartered 2 lb
500 g lean ground beef 1 lb
1 envelope dry onion soup mix
50 ml hot water 1/4 cup
1 bag frozen mixed vegetables
125 ml butter 1/2 cup

In a large saucepan; cook potatoes covered with water. Bring to a boil; reduce heat to medium-low and simmer for 20 minutes or until potatoes are tender.

In a large skillet; brown ground beef until it crumbles or is no longer pink; drain.

Add soup mix and water, stir until seasoning is well blended. Stir in vegetables; remove from heat. Spoon mixture into lightly greased 2 quart (2 L) casserole dish.

Once potatoes are cooked; drain. Add butter and mash. Spoon mashed potatoes over meat mixture. Bake in preheated 350 F (180 C) oven for 30 minutes or until heated through.
