1/2 cup unsalted butter
1/2 cup all-purpose flour
4 cups milk
salt
white pepper
1/4 teaspoon ground nutmeg
Melt butter in a saucepan. Remove saucepan from heat and add flour, a little at a time, stirring constantly with a whisk to form a roux.
Return saucepan to heat and add milk to roux, a little at a time at first, stirring constantly with a whisk to make a paste. Once you have made a paste, add remaining milk more quickly, continuing to stir until milk is well blended with the roux.
Season with salt, pepper and nutmeg.
Simmer on low heat for 2 to 3 minutes, stirring constantly.
Makes 4 cups.
