1/2 cup shortening
1-1/2 cups sugar
1 large eggs
2 cups flour, all-purpose, sifted
1/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 cup sour milk
1 cup mashed bananas (2 – 3)
1 teaspoon vanilla
Cream the shortening and add the sugar gradually. Cream until the mixture is very fluffy. Beat the eggs until fluffy and blend into the shortening/sugar. Stir in flour sifted with the baking powder, baking soda and salt, alternately with the milk, bananas, and vanilla. Beat only a few strokes after last addition, to be sure it is smooth. Pour into 2-9″pans that have been greased and floured. Bake @ 350-degrees for 30 to 35 minutes. Cool 5 minutes. Turn out onto rack to cool completely, then ice.
