1 kg chicken pieces 2 lb
2 onions, cut into chunks
1 pie pumpkin, peeled & cut into large chunks
175 ml peanut butter 3/4 cup
5 ml salt 1 tsp
2 ml cayenne pepper 1/2 tsp
375 ml chicken broth, hot 1 1/2 cup
50 ml lemon juice 1/4 cup
1 ml black pepper 1/4 tsp
125 ml peanuts, chopped 1/2 cup
In a 9 x 13 inch (23 x 33 cm) baking dish; place onions and pumpkin.
In a medium bowl; stir together peanut butter, half of salt and half of cayenne pepper. Gradually stir in hot chicken broth, melting peanut butter. Stir in half of lemon juice. Pour over pumpkin and onions.
Place chicken pieces on top of vegetables. Sprinkle chicken with remaining salt, pepper and lemon juice. Sprinkle black pepper over chicken. Bake in preheated 400 F (200 C) oven for 1 hour or until chicken is thoroughly cooked and pumpkin is tender. Place on serving plate and sprinkle with peanuts.
