25 ml butter 2 tbsp
1 small onion, chopped
500 ml asparagus, blanched & sliced 2 cup
500 ml cheddar cheese, shredded 2 cup
50 ml green onions, chopped 1/4 cup
6 eggs
125 ml fresh bread crumbs 1/2 cup
2 ml salt 1/2 tsp
dash hot pepper sauce
pepper to taste
Melt butter in small fry pan; saute onion over medium heat for about 5 minutes. Arrange asparagus, cheddar cheese and onion in lightly greased 9 inch (23 cm) pie plate.
In medium bowl; beat eggs; stir in bread crumbs, salt, hot pepper sauce and pepper; pour over asparagus mixture. Bake in 350 F (180 C) oven for 25 to 30 minutes or until set in centre. Let stand for 10 minutes before serving.
