Asian Chicken Salad

2-1/2 cups shredded chicken
2 cups diced cucumber
3 cups shredded lettuce
3 cups shredded red or napa cabbage
1 cup shredded carrot
6 green onions, diagonally sliced

Spicy Ginger Sauce
1/4 cup chopped roasted peanuts

Combine first 6 ingredients in large bowl. Toss well, and pour on Ginger Sauce, toss again. Sprinkle with nuts.

Ginger Sauce:
3 Tbsps. rice vinegar
1 Tbsps. oil
1-1/2 Tbsps. soy sauce
1 teaspoon dark sesame oil
2 tsps. minced fresh ginger
1 teaspoon sugar
2 cloves garlic, minced

Combine all ingredients in jar. Cover. Shake vigorously. Chill.
