Apples in a Pumpkin

1 small pumpkin, about 8 inch (20.5 cm)
150 ml packed brown sugar 2/3 cup
125 ml butter, melted 1/2 cup
3 small apples, peeled & thinly sliced
250 ml golden raisins 1 cup
125 ml walnuts, chopped 1/2 cup
1 ml cinnamon 1/4 tsp
dash of nutmeg

Cut top off pumpkin to make a lid. Remove any strings and seeds.

In a medium bowl; blend together sugar, apples, raisins, walnuts, cinnamon and nutmeg. Pour apple mixture into pumpkin. Place pumpkin on baking sheet. Place pumpkin top on pumpkin.

Bake in preheated 350 F (180 C) oven for 1 1/2 hours or until pumpkin is slightly brown and begins to lose its shape. Cool slightly. Arrange on large serving plate.

Scoop out filling, along with some of the pumpkin pulp, into dessert plates. Top with ice cream.
