These delicious apple-flavored flapjacks would serve well as either a quick weekend breakfast or a side dish for pork chops or roasted chicken. A bit of sour cream in the batter makes these pancakes a bit less sweet than most, which might make them a hit at your house. Try them with powdered sugar, sliced bananas or your favorite jam in place of the maple syrup.
3 large eggs, separated
3 tablespoons sour cream
1 apple, peeled, cored and chopped
3 tablespoons all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
3/4 cup pure maple syrup
Combine egg yolks, sour cream, apple, flour, baking powder and cinnamon; stir well.
Beat egg whites with an electric mixer until peaks form; fold into yolk mixture.
Drop batter by 1/4 cup onto a hot, lightly greased griddle. Cook until golden brown, turning once. Serve with maple syrup.
