500 g asparagus, cut into large chunks & cooked until tender 1 lb
250 ml tomato, chopped 1 cup
125 ml onion, chopped 1/2 cup
30 ml fresh cilantro, finely chopped 2 tbsp
30 ml mayonnaise 2 tbsp
15 ml lime juice 1 tbsp
– red pepper sauce to taste –
.5 ml pepper 1/8 tsp
1 garlic clove, finely chopped 1
In a blender or food processor; add asparagus. Cover and blend on medium speed until smooth.
In a medium bowl; stir together asparagus, tomato, onion, cilantro, mayonnaise, lime juice, pepper sauce, pepper and garlic clove.
Serve with baked tortilla chips.
