2-inch piece of cucumber, finely chopped (peeled if waxed)
1/4 cups minced red bell pepper
1/4 cups snipped fresh chives
1 cups fat-free or lowfat sour cream
1/4 cups fresh lemon juice
2 tbsps. lemon zest
1 teaspoon dry mustard
Salt (optional) and freshly ground black pepper
In a small bowl, combine all the ingredients and mix well.
