Black Bean Nachos

500 g nacho tortilla chips 1 lb
1 can black beans (19 oz / 540 ml)
125 ml salsa 1/2 cup
1 small onion, finely chopped
2 garlic cloves, minced
1 green pepper, chopped
2 tomatoes, finely chopped
500 ml monterey jack or cheddar cheese, grated 2 cup

Arrange nachos in large roasting pan.

In a saucepan, combine beans, salsa, onion, garlic and green pepper. Cook over medium heat until onion is tender. Remove from heat. Add tomatoes.

Spoon bean mixture evenly over nachos. Top with cheese. Bake in preheated 400 F (200 C) oven for 15 minutes or until cheese is melted.
