Try this delicious puffed pancake with fruit for brunch!
3 large eggs
1 cup milk
1 cup all-purpose flour
1/2 teaspoon salt
3 tablespoons butter, divided use
6 apples, sliced
2 tablespoons sugar
1/2 teaspoon ground cinnamon
Preheat the oven to 475F (245C).
Combine eggs, milk, flour, and salt in a medium bowl. Beat for 3 minutes with an electric mixer.
In an oven-safe skillet, melt 2 tablespoons butter and add the batter. Bake about 15 minutes, then reduce the temperature to 350F (175C), and bake 10 minutes more, or until browned. Remove from the oven.
Meanwhile, melt 1 tablespoon butter in a skillet over medium heat; add sliced apples, sugar, and cinnamon. Saute until the fruit is soft. Spread over the warm pancake.
