2 tablespoons butter
1 cup shredded cheddar cheese
6 large eggs
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup crushed saltine crackers
1/4 cup shredded cheddar cheese
1/2 cup heavy cream
Preheat oven to 350F (175C).
Melt butter in a baking dish, sprinkle with 1 cup shredded cheddar cheese. Drop in eggs, sprinkle with salt and pepper, cover with crushed crackers mixed with 1/4 cup shredded cheddar cheese. Drizzle with cream and bake for 15 minutes.
Makes 3 servings.
