Skinny Mashed Potatoes

12 potatoes
3/4 cup fat free clear chicken broth
1/2 cup plain fat free yogurt
1 teaspoon chives, chopped
salt & pepper to taste

Peel potatoes and slice into a large pan. Cover potatoes with water. Cook over medium high heat until water begins to boil. Continue cooking until potatoes are tender and cooked through. Drain off water.

Add chicken broth, yogurt, chives and salt and pepper to taste. Mash potatoes with a potato masher or with an electric mixer on low speed.

Serves 4
