Hot Roast Pork Sandwich (Fresh Ham) for 100

Portions: 1 Sandwich Each

18 lb 12 ounce ham, fresh, cooked
200 slices (12 lb) bread
3-1/8 gallons, 1-2/3 Brown Gravy recipe, prepared, hot

Cut pork ham in thin slices, 16 to 24 slices per pound. Place 3 to 4 slices pork ham on one slice of bread. Top with second slice of bread. Prepare 1-2/3 recipe for Brown Gravy recipe using pork drippings. Pour 1/2 cup hot gravy over sandwich. Serve immediately.

NOTE:
30 lb 12 oz pork, ham, boneless will yield about 18 lb 12 oz cooked fresh ham. See “Roast Fresh Ham” recipe for cooking directions.
