Temperature: 350 degrees F. Griddle
100 slices (8 lb) ham, cooked, boneless
100 slices (8 lb) turkey, boneless, cooked
100 slices (6 lb 4 oz) cheese, Swiss
200 slices (12 lb) bread
1-1/8 cups (5 oz) milk, nonfat, dry
5-1/2 cups water
2 teaspoon salt
2-1/2 quart (48 eggs) eggs, whole, slightly beaten
1 quart (2 lb) shortening, melted
Place 1 slice each ham, turkey, and cheese on 1 slice bread; top with second slice bread. Reconstitute milk and water; add eggs and salt. Blend thoroughly. Dip each side of sandwich into egg and milk mixture; drain. Grill each sandwich on well-greased griddle about 2-1/2 minutes on each side or until golden brown and cheese is melted.
NOTE:
10 lb canned ham will yield about 8 lb cooked ham.
12 lb turkey, boneless, raw will yield about 8 lb cooked turkey.
1-1/2 quart other types of milk may be substituted for nonfat dry milk and water.
