6 large tomatoes
375 ml cooked long grain brown rice 1 1/2 cup
1 can flaked white tuna in water, drained (6 oz / 170 g)
2 large hard cooked eggs, chopped
125 ml grated zucchini 1/2 cup
50 ml celery, finely chopped 1/4 cup
50 ml green onion, thinly sliced 1/4 cup
30 ml fresh basil, chopped 2 tbsp
15 ml fresh mint, chopped 1 tbsp
5 ml grated lemon zest 1 tsp
salt & pepper to taste
Trim 1/2 inch (12 mm) slice from top of each tomato. Using small spoon, scoop out seeds from each tomato. Discard seeds. Scoop out pulp. Chop pulp and tomato tops. Put into large bowl.
Add rice, tuna, eggs, zucchini, celery, onion, basil, mint, lemon zest, salt and pepper. Stir. Spoon rice mixture into tomato cups.
