1 lb. 12 ounces (1 quart + 2/3 cup) Brown sugar
8 ounces (1 cup) Soy margarine
4 Eggs
1 lb. 6 ounces (1-1/4 quarts) All-purpose flour
3-1/2 ounces (1 cup) Soy protein isolates
4 teaspoons Baking soda
2 teaspoons Baking powder
2 teaspoons Grated lemon peel
2 teaspoons Ground cinnamon
1 teaspoon Ground nutmeg
1 teaspoon Salt
2 cups Coffee, cold
1 lb. 2 ounces (1 quart) Apples, pared, diced
12 ounces (2 cups) Raisins
2 teaspoons Vanilla
Topping:
4 ounces (1/2 cup) Granulated sugar
4 ounces (2/3 cup) Brown sugar
2 ounces (1/2 cup) Walnuts, chopped
Cream sugar and margarine until light and fluffy. Add eggs, one at a time, beating after each addition.
Combine flour, soy protein, baking soda, baking powder, lemon peel, spices and salt; mix well.
Add dry ingredients alternately with coffee to creamed mixture; mix well.
Mix in apples, raisins and vanilla.
Spread batter in oiled half baking sheet. Sprinkle with Topping.
Bake at 350°F for 45 minutes or until wooden pick inserted near center comes out clean.
Cut cake 6 x 8.
