Makes 6 servings
1 pound sweet onion, peeled and cut into 1/2-inch slices
1 tablespoon apple cider vinegar
1 tablespoon granulated sugar replacement, or 2 packets
2 tablespoons catsup
1/2 teaspoon salt
1 cup water
1 teaspoon cornstarch
Place sliced onions into a large non-reactive saucepan. Add vinegar, sugar substitute, catsup, salt, and water. Bring to a boil, reduce to a low flame, cover, and simmer for 20 minutes. Combine cornstarch with an additional 1/4 cup water-mix well. Stir into saucepan. Heat and stir until thickened. Remove from heat. Serve hot, warm, or at room temperature
