New York Style Cheesecake

1-1/2 cups flour
1/2 cup sugar
1/2 cup sugar
1 egg yolk
1/4 cup butter
1/2 tsp. lemon zest
2 lbs. cream cheese
2 eggs
2 tsps. vanilla
2 Tbsps. cornstarch or arrowroot powder
2 cups sour cream
Preparation

Serves 12

Preheat oven to temperature 375°F. In a bowl, blend first 5 ingredients until it resembles cornmeal. Transfer to a 9 inch springform pan. Spread evenly over bottom and about 2 inch up the sides. Cream the sugar, cream cheese, and eggs using a mixer or food processor. Add vanilla and cornstarch and blend well. Fold in the sour cream. Pour into the springform pan. Bake for about 1 hour, or until tester comes out clean when inserted in center. Allow to cool before unmolding. Serve at room temperature.
