7 heaped tbs of ripe mango
4 tbs rice wine vinegar
1 tbs palm sugar
1 tbs finely chopped fresh ginger
1/2 tbs soy sauce
2 good sized salmon cutlets
Olive oil
Brush cutlets with olive oil and place under a low grill.
Place remainding ingredients in sauce pan and mash up together.
place over a low heat and stir occassionly.
When salmon is cooked, place on a bed of steamed rice and pour over the mango sauce.
