Low Fat Mango Salsa

1 tablespoon safflower oil
1 large Onion
2 each Chiles, Jalapeño, Finely chopped
2 each Mangos, Finely chopped
2 each Tomatoes
2 each Limes
1 tablespoon Brown Sugar
pinch Salt
pinch Black Pepper

Heat the oil on medium-high in a small sauce-pan and cook the onion and chile until translucent and soft, about 5 minutes Add the mangoes and tomatoes and simmer slowly under cover for another 30 minutes. Add the lime juice and sugar, season to taste. Enjoy hot or chilled.
