Combine;
7 cups tomatoes, peeled and grated
3 cups yellow onions, grated
2 jalapeno peppers, grated fine
8 cups zucchini, grated fine
5 tablespoons salt
Let ingredients stand overnight.
Mix Together Well;
1 teaspoon garlic powder
1 tablespoon cumin
1 cup brown sugar
1 tablespoon cornstarch
2 teaspoons dry mustard
2 cups vinegar
2 teaspoons crushed red pepper
1 teaspoon nutmeg
1 teaspoon pepper
1 teaspoon turmeric
Add to vegetables
Boil 30 minutes.
Fill HOT JARS and cap. Boil 15 minutes more.
