6 large Texas sweet onions, chopped
6 unpared cooking apples, chopped
6 tomatoes, chopped
1 cup white wine vinegar
1-1/2 cups firmly packed light brown sugar
1 teaspoon salt
1/2 teaspoon minced fresh ginger
1/2 teaspoon ground cloves
1 pinch cayenne pepper
In large saucepan, combine onions, apples, tomatoes, vinegar, sugar, salt, ginger, cloves and pepper. Bring to a boil, stirring constantly. Reduce heat and simmer until thickened, about 1 hour, stirring occasionally.
