1 cup cranberries; fresh or frozen
1/4 c brown sugar; packed
1/4 c celery; chopped finely
2 tablespoons onion; chopped finely
1 tablespoon ginger root; chopped finely
1/4 c cider vinegar
2 tablespoons water
2 teaspoons Dijon style mustard
In small saucepan over high heat, combine all ingredients. bring to a boil; reduce heat and simmer, stirring, until mixture is thickened, about 10 minutes. Serve warm, or refrigerate and serve cold.
Makes 1 cup relish.
