75 ml butter
125 ml onion, chopped
250 ml celery, chopped
2 L soft bread crumbs
500 ml oranges, peeled & diced
10 ml grated orange rind
3 ml poultry seasoning
5 ml salt
1 ml pepper
250 ml pecan pieces, toasted
In a skillet; melt butter. Add celery and onion; saute until tender but not brown.
In a large bowl; combine bread crumbs, oranges, orange rind, seasonings and pecans. Add celery and onions. Toss together lightly. This makes enough stuffing for a five pound (2.3 kg) bird.
