Makes 20 servings
3 tablespoons sherry vinegar
3 tablespoons balsamic vinegar
1/4 cup apple juice
1/8 cup granulated sugar substitute, or three packets, dissolved in juice
1 shallot, minced
3 cloves garlic, minced
2 tablespoons fresh ground black pepper
1 teaspoon kosher salt
3/4 cup fat free chicken broth, or vegetable broth
In medium bowl, mix together the vinegars and the apple juice. Stir in the shallot, garlic, pepper and salt. Whisk in the 3/4 cup broth. Taste and adjust acidity as needed. Use immediately to dress greens, toss with pasta and tomatoes, or as a marinade for grilled shrimp or grilled lamb.
