Italian Cheesecake

1-1/2 pounds ricotta cheese
1 (8-ounce) package cream cheese
3 large egg yolks
1/2 cup granulated sugar
2 tablespoons brandy
2 tablespoons vanilla extract
2 graham cracker pie crusts
1/4 cup chocolate syrup

In a large mixing bowl, combine together ricotta cheese, cream cheese, egg yolks, sugar, brandy, and vanilla, beating until well-blended.

Pour into two 9-inch graham cracker pie crusts and drizzle with chocolate syrup.

Bake in a 350°F (175°C) oven for 30 minutes, or until the center is set.

Makes 16 servings.
