30 ml vegetable oil 2 tbsp
3 chicken breasts, skinless, boneless & sliced
250 ml chicken stock 1 cup
30 ml liquid honey 2 tbsp
30 ml soy sauce 2 tbsp
30 ml cornstarch 2 tbsp
50 ml peanut butter 1/4 cup
2 green onions, chopped
1 red pepper, cut into strips
1 package linguine noodles
peanuts, chopped
In skillet; heat oil. Add chicken and saute until golden. Remove and set aside.
In small saucepan; combine chick stock, honey and soy sauce. Whisk in cornstarch and peanut butter. Cook and stir until just thickened. Stir in onion, pepper and cooked chicken; heat through.
Cook linguine according to package directions.
In large serving bowl; toss linquine with chicken mixture. Sprinkle with peanuts.
