125 ml water
40 ml soy sauce
1 onion, sliced
500 ml yam or sweet potato, diced
250 ml carrot, sliced
250 ml celery, chopped
1 red pepper, diced
750 ml can tomatoes, diced
1 can chick peas, drained & rinsed
500 ml vegetable or chicken stock
75 ml peanut butter
10 ml curry
125 ml fresh cilantro, chopped
In a large saucepan; heat water with soy sauce. Add onions, yams, carrots, celery and red pepper. Simmer 8 to 10 minutes. Add tomatoes, chick peas and stock.
Remove a bit of the hot liquid to a small container. Blend peanut butter into hot liquid. Add to vegetables along with curry powder. Simmer for 1/2 hour.
Add cilantro; mixing thoroughly. Serve over brown rice or noodles.
