Scalloped Layered Potatoes

50 ml butter or margarine
30 ml flour
375 ml milk
250 ml cheddar cheese, shredded
250 ml frozen green peas
250 ml carrots, sliced
125 ml onion, chopped
1 clove garlic, crushed
6 medium potatoes, thinly sliced

In a small saucepan; melt butter. Add flour and let bubble about 1 minute. Slowly add milk and bring to a boil, stirring constantly. When thickened, add cheese and stir until melted.

In a medium bowl; mix peas, carrots, onion and garlic.

In a greased casserole dish; layer potatoes, then pea and carrot mixture. Pour cheese sauce over top. Cover and bake in preheated 350 F (180 C) oven for about 1 hour. Uncover and bake an additional 15 to 20 minutes or until potatoes are tender.
