Roasted Vegetable Pasta Sauce

2 tomatoes, cut in half
2 red peppers, cut in half & seeded
2 medium red onions, cut in half
1 garlic head, peeled & cloves separated

Place tomatoes, peppers, onion and garlic cut side up on large cookie sheet.

Drizzle vegetables with small amount of olive oil, salt and pepper to taste.

Bake in preheated 350 F (180 C) oven for 50 minutes. Cool on pan for 5 minutes.

Place all ingredients in blender including juices from pan in blender. Blend until smooth. Serve hot over pasta.
