625 ml baby spinach, stems removed 2 1/2 cup
30 ml sun-dried tomatoes in oil, drained & chopped 2 tbsp
75 ml cashews, toasted & coarsely chopped 1/3 cup
2 bacon slices, cooked crisp & crumbled
30 ml vegetable oil 2 tbsp
15 ml apple cider vinegar 1 tbsp
5 ml granulated sugar 1 tsp
salt to taste
In a medium bowl; toss spinach, tomatoes, cashews and bacon.
In jar with lid; combine oil, vinegar, sugar and salt. Shake well. Drizzle dressing over spinach.
