Sauteed Tomato Zucchini

50 ml butter 1/4 cup

1 L zucchini, sliced 4 cup

50 ml onion, chopped 1/4 cup

375 ml cherry tomatoes, halved 1 1/2 cup

40 ml tomato juice 3 tbsp

pinch dried oregano, crushed

pinch dried thyme, crushed

pinch dried basil, crushed

salt & pepper to taste



Melt butter in skillet over medium heat; add zucchini and onion. Cook, stirring, until zucchini is tender crisp. Add tomatoes, tomato juice, oregano, thyme and basil; heat through. Add salt and pepper to taste.
