125 ml pineapple juice 1/2 cup
50 ml brown sugar 1/4 cup
15 ml cornstarch 1 tbsp
5 ml lemon juice 1 tsp
15 ml butter 1 tbsp
250 ml pineapple chunks 1 cup
1 L cooked beets, baby whole or quartered large 4 cup
In a medium saucepan; combine juice, sugar and cornstarch. Bring to a boil, reduce heat and simmer until thickened. Stir in lemon juice, butter, pineapple and beets. Heat for 1 or 2 minutes.
