540 ml black beans, drained & rinsed 19 oz
341 ml corn kernels, drained 12 oz
250 ml tomatoes, chopped 1 cup
125 ml green or red pepper, chopped 1/2 cup
125 ml red onion, chopped 1/2 cup
50 ml fresh parsley, chopped 1/2 cup
DRESSING
25 ml balsamic vinegar 2 tbsp
2 ml ground cumin 1/2 tsp
15 ml olive oil 1 Tbsp
2 ml garlic clove, minced 1/2 tsp
salt & pepper to taste
SALAD: In large bowl; combine beans, corn, tomatoes, pepper, onion and parsley. Set aside.
DRESSING: In small bowl; whisk together vinegar, cumin, oil, garlic, salt and pepper. Blend well. Pour over salad.
