4 fresh ripe tomatoes, peeled & sliced
56 g feta cheese, crumbled 2 oz
1/2 red onion, thinly sliced
1/2 cucumber, thinly sliced
45 ml fresh lemon juice 3 tbsp
25 ml olive oil 2 tbsp
50 ml pitted kalamata olives 1/4 cup
Layer tomato, onion and cucumber slices on a platter. Combine lemon juice and olive oil. Pour over vegetables. Sprinkle with feta cheese. Garnish with olives.
