Mahi Mahi Salad Sandwich

8.5 oz. Hellmann’s® or Best Foods® Light Mayonnaise
1 oz. Sofrito, prepared
0.5 oz. Meyer lemon juice, fresh
0.25 oz. Cilantro, fresh, chopped
Salt, optional
4 oz. Mahi Mahi filet, grilled or baked
1 Wheat bun, grilled
0.5 oz. Pickled onions and radishes
1 Tomato slice
0.25 oz. Arugula

Prepare Sofrito Mayonnaise: Combine Hellmann’s®/Best Foods® Light Mayonnaise, prepared Sofrito, lemon juice, cilantro and salt in a medium bowl and stir together until well combined. Reserve refrigerated.

Break apart the Mahi filet with a fork so it flakes. Combine Mahi with sofrito mayonnaise so that the fish binds together. To build the sandwich, starting from the bottom bun, layer pickled onions and radishes, Mahi mixture, sliced tomato, and arugula. Top with the second slice of toasted wheat bun. Serve immediately.
