1 medium onion, chopped
25 ml vegetable oil 2 tbsp
15 ml curry powder 1 tbsp
2 ml granulated sugar 1/2 tsp
3 medium potatoes, cubed
175 ml water 3/4 cup
salt
In a skillet or wok over medium heat; stir fry onion in oil until tender. Add curry and sugar; stir fry for 1 minute, ensuring curry doesn’t burn. Add potatoes; stir fry until coated about 2 minutes.
Add water and bring to a boil; cover, reduce heat and simmer for 8 to 10 minutes or until potatoes are tender. Uncover and simmer until liquid evaporates. Season with salt to taste.
