60 g butter 2 oz
50 ml water 1/4 cup
25 ml brown sugar 2 tbsp
25 ml golden syrup 2 tbsp
2 eggs, separated
125 ml milk 1/2 cup
250 ml plain flour 1 cup
250 ml cooked, mashed sweet potato 1 cup
Combine butter, water, sugar and syrup in pan; stir over heat, without boiling until sugar is dissolved. Bring to boil, without stirring, remove from heat; cool.
Transfer mixture to bowl, stir in egg yolks, milk, then flour and potato; beat until smooth. Beat egg whites in small bowl with electric mixer until soft peaks form; gently fold into batter.
Drop about 1/3 cup of mixture into heated greased waffle iron. Close iron, cook about 1 minute or until waffle is browned. Repeat with remaining batter. Serve waffles with maple syrup and ice-cream, if desired.
