2 cups chopped rhubarb
1/2 cup granulated sugar
2 tablespoons butter
1/4 cup firmly packed brown sugar
1/4 cup whole wheat flour
1/4 cup quick-cooking oats
1/4 teaspoon ground cinnamon
1/4 cup chopped walnuts
In a microwave-safe baking dish combine rhubarb and sugar.
Microwave on HIGH for 3 minutes, stirring once.
In a separate bowl combine butter, brown sugar, whole wheat flour, quick cooking oats and cinnamon; mix until crumbly. Add walnuts; sprinkle over the rhubarb mixture.
Microwave on MEDIUM for 6 minutes.
Serve over ice cream, if desired.
