4 cups chopped fresh broccoli
1 medium red onion, chopped
1/4 cup chopped fresh dill
2 tablespoons capers, drained*
Balsamic Dressing (recipe follows)
1/4 cup chopped pecans, toasted (optional)*
Toss together first 5 ingredients. Cover and chill 30 minutes. Sprinkle with pecans before serving, if desired.
Makes about 5 cups.
* 2 tablespoons chopped green olives may be substituted for capers. 1/4 cup pine nuts, toasted, may be substituted for pecans.
Balsamic Dressing
1/3 cup balsamic vinegar
1/4 cup olive oil
1 garlic clove, minced
1/2 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
Whisk together all ingredients.
Makes about 2/3 cup.
