6 to 8 medium russet potatoes, washed and cut into 2-inch cubes
6 tablespoons olive oil
4 cloves garlic, minced
2 tablespoons minced fresh parsley
1 teaspoon dried basil, crumbled
1 teaspoon dried oregano, crumbled
Freshly ground pepper to taste
Salt to taste
Preheat oven to 350*F(175*C).
Combine potatoes, oil, garlic, herbs and pepper in large bowl and toss to coat. Spread potatoes in single layer in 13 x 9 x 2-inch baking pan.
Bake, uncovered until brown and cooked through, turning once, about 1 hour.
Season potatoes to taste with salt and serve immediately.
