Potato Frittata

15 ml margarine 1 tbsp
1 onion, chopped
1 green bell pepper, sliced
1 potato, grated
250 ml broccoli, chopped 1 cup
5 ml oregano 1 tsp
.5ml pepper 1/8 tsp
4 eggs

In a skillet; melt margarine. Add onion, pepper, potato, broccoli, oregano and pepper. Cook, stirring occasionally until tender. In a small bowl; beat eggs until frothy and pour over the vegetables. Cover, and cook over low heat 5 to 7 minutes or until eggs are set.

Serves 4
