Prizewinning Potato Salad

8 red potatoes, diced
125 ml mayonnaise 1/2 cup
125 ml sour cream 1/2 cup
25 ml horseradish 2 tbsp
15 ml parsley, chopped 1 tbsp
salt to taste
2 ml pepper 1/2 tsp
4 eggs, hard boiled & finely chopped
3 bacon slices, cooked & crumbled
2 green onions, thinly sliced

Cook potatoes until tender, about 20 minutes; drain. In large bowl; whisk mayonnaise, sour cream, horseradish, parsley, salt and pepper until smooth. Stir in potatoes and remaining ingredients until well combined.

Serves 8
