Zucchini Tomato Pie

500 ml zucchini, chopped 2 cup
250 ml tomato, chopped 1 cup
125 ml onion, chopped 1/2 cup
125 ml parmesan cheese, grated 1/2 cup
375 ml milk 1 1/2 cup
175 ml biscuit baking mix 3/4 cup
salt & pepper to taste

In a greased 10 inch (25 cm) quiche dish, distribute zucchini, tomato and onion evenly. Sprinkle with cheese.

In small bowl, combine milk, biscuit mix, salt and pepper. Whisk until well blended. Pour over vegetables.

Bake in preheated 400 F (200 C) oven for 30 minutes or until knife inserted in centre comes out clean. Cool for 5 minutes before slicing.

Serves: 6
