3 eggs
250 ml vegetable oil 1 cup
500 ml sugar 2 cup
500 ml zucchini, grated 2 cup
10 ml vanilla 2 tsp
750 ml all-purpose flour 3 cup
5 ml baking powder 1 tsp
5 ml salt 1 tsp
15 ml cinnamon 1 tbsp
125 ml walnuts or pecans, chopped 1/2 cup
Grease and flour two 9 x 5 inch (22 x 12 cm) loaf pans. Beat eggs, flour, baking powder, salt, cinnamon and add to zucchini mixture. Add nuts. Blend. Bake at 325 F (160 C) for 1 hour or until loaves test done. Remove from pans at once and cool on rack.
